What Can I Cook For My Boyfriends Birthday?

Ok I am a chef and IM quite sure he was going to cook some things if I post recipes, my boyfriend asked me to cook for me and him on his 22nd birthday, and I accepted.
The problem is I have a month to decide what to cook and want to do a practice run so I know it tastes good. this is the first time you have to cook it properly.
I want to make an appetizer and a main meal without dessert.
I especially love chicken, an example of a meal he thinks is chicken wrapped in bacon with cheese on it, or simply different hot sauces with chicken.
I do not know what to put on the side of meals.
It is very experimental, with various vegetables.
I have no idea what the starter to do, but I do not just buy food and cooking, I really want to do them for him.
Any ideas would be great.

    3 Pepper Chicken
    ¼ tsp cayenne pepper
    ¼ tsp black pepper
    ¼ tsp white pepper
    ¼ tsp paprika
    ½ tsp basil
    ½ tsp garlic powder
    ¼ tsp dry mustard
    4 boneless, skinless chicken breasts
    2 Tblsp butter
    2 chopped green onions
    1 ½ cups chicken stock, heated
    1 Tblsp cornstarch
    3 Tblsp cold water
    2 Tblsp sour cream
    flour
    salt
    •Mix spices and herbs together, sprinkle over chicken and dredge with flour.
    •Melt butter over medium heat, add chicken and cook 3 minutes. Season with salt, turn over and cook 3 minutes.
    •Add green onions and cook 1 minute. Pour in chicken stock and cook 6 minutes over low heat. Do not cover.
    •Remove chicken breasts and set aside on warm platter.
    •Turn up heat to high and cook sauce 3 minutes.
    •Dissolve cornstarch in cold water; stir into sauce. Continue cooking for 1 minute. Remove pan and let stand 2 minutes.
    •Stir in sour cream. Serve chicken with sauce. I like to serve this with little roasted red potatoes.

    Thai Chicken Stir-Fry
    3 Tblsp dry sherry
    2 Tblsp soy sauce
    1 Tblsp fish sauce (optional)
    1 Tblsp water
    1 tsp cornstarch
    ½ tsp crushed red pepper flakes
    12 ounces skinless, boneless chicken
    1 Tblsp cooking oil
    1 tsp grated gingerroot
    2 cloves garlic, minced
    1 cup bias-sliced carrots
    2 cups fresh pea pods (tips and strings off) or one 6-ounce pkg frozen pea pods, thawed
    4 green onions, bias-sliced into 1-inch pieces
    1/3 cup dry roasted peanuts
    Hot cooked rice (optional)
    1.For sauce, stir together sherry, soy sauce, water, cornstarch, and red pepper. Set aside.
    2.Rinse chicken, pat dry. Cut into 1-inch pieces; set aside.
    3.Heat oil in a wok over medium-high heat. Cook garlic and ginger for about 15 seconds when hot. Add carrots and stir-fry for 2 minutes. Add pea pods and green onions and stir-fry 2 or 3 minutes (til crisp-tender). Remove veggies from pan.
    4.Add chicken to hot wok and stir-fry 3 or 4 minutes until no longer pink. Push chicken to outside of pan. Stir the sauce and add to the center of the pan. Cook and stir until thickened and bubbly. Return veggies to the pan and add peanuts. Stir to coat1-2 minutes; heat through. Serve over rice.
    One of my favorite appetizers:
    Cut bacon into 1/3 strips. Wrap around pitted dates and secure with toothpicks. Bake on cookie sheet for 25 minutes at 350. Let cool a few minutes, and YUM!

    Make some chicken burritos or enchiladas. Wrap cooked chicken with a bit of sauce and some cheese, and maybe a small spoonfull of black beans, in a flour tortilla, cover with enchilada sauce & bake. Add more cheese on top a few minutes before serving.
    Spanish rice is a good side, but I recommend a corn-blend that I found in WalMart's frozen section--the brand is PictSweet, and its corn with peppers & onions, and black beans. It was really good!
    A mixed salad or a taco salad would be a good appetizer,

    Make your chicken (fresh, free range from the butcher) wrapped in bacon (use wood smoked bacon from the butcher) with Gruyere cheese. Serve a green salad with a combination of greens, some chopped green onions, and a spinkle of croutons. Make a simple rice dish with chicken broth in place of the water and a dash of curry powder and turmeric for color.
    For a starter, serve steamed artichokes with a garlic aioli.
    Or, baked Brie with nice crackers and fresh cut up veg - like carrots, celery, jicama, &c.;

    Make a nice salad with his fav dressing and serve with garlicky cheese bread for a starter, Mmmm, then fry up a couple of nice Ribeyes and serve with steak fries.

    Starter.
    Bacon Wrap Arounds.
    Mix together
    6 ozs minced cold cooked meat.
    4 ozs cottage cheese.
    1/2 stuffing mix.
    1 medium finely chopped onion.
    Salt and pepper.
    1/2 chopped red Bell pepper.
    1 tablespoon of chopped parsley.
    Spread the mixture on the strips of bacon and secure with a cocktail stick.
    Place on a greased oven tray and bake for 20 minutes at 180C (350F)
    Main
    Chicken Kebabs.
    4 Chicken Breasts.
    2T Soy Sauce.
    2T Dry White Wine.
    1 Clove Garlic Crushed.
    1t Fresh Grated Ginger.
    Chop chicken into 2cm (¾”) cubes. Mix in a bowl with soy, wine garlic and ginger and marinade for 1-2 hours.
    Prepare vegetables for kebabs. Mushrooms, tomatoes, peppers (bell), onions, pineapple, baby corn.
    Thread onto skewers and cook on the grill.
    Sides
    Mashed potatoes and mash carrots and parsnips together with plenty off cracked black pepper.
